Today’s veggie pasta sauce is largely butternut squash and beetroot with some yellow courgette and onion. Unfortunately the beetroot added a lot more colour than I was prepared for, it was glow in the dark fuchsia.
After zapping it in the blender, I added some V8 and tomato puree to calm it down a bit, along with basil and smoked paprika, it looks a bit more tomato like now, still kinda neon.
