I don’t think there is such a thing as a bad flapjack, but I’m in a constant search for the perfect one. I searched for a Peanut Butter Flapjack recipe to get a protein hit into them. I found a good recipe from Waitrose here.
Having read the comments I repaced 75g of the butter with extra peanut butter. I used crunchy because that’s what we had, but I think having the actual bits of peanut in them is a bonus. I used 1/4 maple syrup to replace some of the golden syrup but I wouldn’t do that again as there’s no flavour benefit but a big cost hike.
I had no sesame seeds so added poppy seeds, I really like them so that was fine. I also used a smaller pan because that’s what I had, it resulted in a thicker, squishier flapjack, which has to be a good thing. These aren’t the best flapjacks in the world, but they are a good step on my quest.
