Pumpkin Cake

I’m not a huge fan of pumpkin pie, but I do like pumpkins and I do like spice, so Pumpkin Cake is a great alternative. I use Gordon Ramsay‘s recipe from The Times, it’s here. I do make a few adjustments. The icing is just a bit too much so I use ‘lighter’ cream cheese and leave out the butter and the vanilla, reducing the icing sugar a bit and letting the orange shine through.

The recipe calls for currants, which are great, but I’ve used raisins and sultanas without any major change to the outcome. It calls for walnuts too, but I’ve used pecans successfully.

 I tend to get my tinned pumpkin personally imported from North Carolina in luggage, but I can get it from the Ice Hockey shop in Coventry (although the temptation to stock up on massively overpriced Payday bars is overwhelming). If anyone knows of a supplier in Leicester I’d be happy to hear of it.
