Easy Vegetarian Dish For Christmas or Thanksgiving
This Sweet Potato Crusted Holiday Quiche is great for family gatherings as it’s filling, nutritious and looks really festive, yet it is easy to make and can be mostly prepared in advance, then finished off in the oven before serving.
I get sick of nut roast over the holidays. It can be nice, but it’s rather like a veggie version of meatloaf, and I don’t want to serve meatloaf for celebration meals. This veggie centerpiece dish for the holidays is easy to make, colorful and works just as well served cold for supper or lunch the next day.
You can mix up the fillings if you prefer other choices, but this is my favorite.

Ingredients
- 2 large sweet potatoes (about 1lb each)
- 12 eggs
- Black pepper
- 1 14 oz can chickpeas/garbanzo beans
- 6 cloves garlic
- 1 red chili
- 1 red bell pepper
- 1 large onion
- 1 tbsp smoked paprika
- 1 tbsp cumin
- 2 cups cheddar
- 3/4 cup yogurt
Sweet Potato Crust Instructions
- Preheat the oven to 425F 220C Gas 7
- Grate your sweet potatoes
- Squeeze the grated potatoes to get rid of excess juice
- Grind about a teaspoon of black pepper into the potatoes
- Beat two of the eggs together an mix them into the potatoes
- Butter your dish
- Spread the sweet potatoes in the dish, pushing up at the sides to create a crust
- Put in the hot oven and bake for 30 minutes
Preparing Your Veggie Holiday Main Course Filling
- Warm a little olive oil in a heavy based pan
- Crush the garlic and add to the oil
- Add the cumin and paprika
- Thinly slice the onions and add them to the garlic
- Stir
- Cut the pepper into 1/2″ cubes and add to the onions
- Stir
- Add the drained, rinsed chick peas
- Stir
- Cook for a couple of minutes until everything is coated in spiced oil.
- Spread the filling over the sweet potato crust
Finishing Your Holiday Quiche
- Set the oven to 375F 190c Gas 5
- Beat the remaining 10 eggs
- Mix in the the yogurt
- Mix in the cheese
- Pour evenly over the filling
- Bake for 1 hour, turning the dish around half way through to ensure even cooking
- Check that the egg has set, if not, give it another ten minutes
- Leave to cool and settle for 10 minutes before serving
- Cut into squares like lasagna to serve with some salad
